How Carbohydrates Affect Cholesterol Levels

Not all carbs affect cholesterol in the same way, as some may cause your cholesterol to go up severely, while others may actually help control it. Carbs that cause cholesterol levels to rise are usually refined carbs, and when we consider these, we can look at how exactly they cause high cholesterol.

Carbohydrates seem to follow a certain sequence of steps which cause higher levels of cholesterol:

Step 1:

Carbohydrates can increase triglycerides which cause very low-density lipoprotein particles (VLDL) to be produced in the liver.

Step 2:

VLDL containing high amounts of triglyceride interacts with LDL particles, making them become smaller. This will be shown in higher LDL cholesterol values.

Step 3:

Smaller LDL particles are more prone to oxidation – Oxidized LDL particles are more easily absorbed by inflammatory white blood cells in the artery walls and atherosclerotic plaque.

Step 4:

Smaller LDL particles are more inclined to glycation, which is an important occurrence that makes the LDL particles cause atherosclerotic plaque more easily. Glycated LDLs are not recognized by the LDL receptor, which causes them to stay in the bloodstream longer than non-glycated LDL. Glycated LDL is therefore taken up by inflammatory white blood cells in plaque.
