Mixed tomato and basil salad


200g cherry tomatoes, halved

3 ripe large tomatoes, cut into wedges

1 red onion, thinly sliced

ΒΌ cup small basil leaves

1 tablespoon olive oil

2 teaspoons red wine vinegar


Layer tomatoes, onion and basil in four airtight containers. Drizzle with oil and vinegar and season with salt and pepper. Place in the fridge for at least 2 hours to develop the flavors.
