1 x ±200g punnet grape tomatoes, quartered
½ red onion, finely chopped
1/3 cup chopped fresh coriander
2 teaspoons fresh lime juice
½ teaspoon finely chopped fresh red chilli (optional)
Combine the tomato, onion, coriander, lime juice and chilli, if desired, in a bowl. Cover with plastic wrap and set aside for 1 hour to develop the flavours.
