Avocado and cucumber salad

Ingredients (serves 6)

  • 175g baby salad leaves
  • 2 medium avocados, chopped
  • 4 green onions, thinly sliced
  • 2 large English cucumbers, halved, thinly sliced
  • ¼ cup lemon juice
  • ¼ cup olive oil


Combine salad leaves, avocado, onion and cucumber in a bowl. Place lemon juice and oil in a screw-top jar. Season with salt.
