Ingredients (8 servings)
- 1kg pumpkin, cut into 8 thick wedges (unpeeled)
- 2 tablespoons honey
- 1 tablespoon extra virgin olive oil
- 1 garlic bulb, halved crossways
Preheat oven to 200C/180C fan-forced. Line a large baking tray with baking paper. Place pumpkin on tray, in a single layer. Drizzle with honey and oil. Place garlic on tray, cut-side down. Season with salt and pepper.
Roast for 35 minutes or until pumpkin is golden and tender. Serve.
